Overview

Sint Servattumus is a Dutch craft brewery based in Schijndel, North Brabant. It was founded in 1996 by Toon van der Heijden and brothers Carli and Henk van den Ekart, who had begun homebrewing in 1992. The brewery specialises in beers brewed with spelt, using spelt from the bolle akkers in Liempde and hops preferably sourced locally, including from a restored hop field in Schijndel. Its name combines Sint-Servatius, the patron saint of Schijndel, with the Brabant expression "vat um us", referring to grabbing a crate of beer. The brewery produces a wide range of spelt beers—including Spelt Enkel, Spelt Dubbel, Spelt Tripel, Spelt Honing, Spelt Stout, Spelt Wit, Spelt Bock, Spelt Weizen, and Spelt Saison Tripel—as well as other beers such as Aspergebier Triple A, Aardbeienbier, Blauwe Bessen Bier, 't Hopbelleke, Luie Lozzie, Het Witte Goud, and Zoethouter Tripel. Beyond beer, it makes speltjenever (spelt gin), Schijndelse whisky, and since 2021 a beer cheese. Annual production is around 300 hectolitres across roughly 63 brews per year. The brewery also brews for other breweries and supplies mainly shops, liquor stores, and wholesalers. It operates a tasting room and a brewery shop. Over the years the brewery has grown from a kitchen hobby to a professional operation. It obtained a sales licence in 1997, opened its official premises on Ericastraat in 2000, added a tasting room in 2001, acquired a bottling line in 2003, and installed a new brewhouse in 2005. In 2009 it was named a 'Held van de Smaak' in Brabant and won the Publieksprijs van Nederland. A distilling licence followed in 2010, leading to speltjenever and whisky production. After the death of Henk van den Ekart in 2019, Carli van den Ekart continued the brewery with Paul Mettler and Riet van den Ekart. In 2020 the brewery was restructured and downsized, the building was sold, and the logo and house style were renewed.

History

Sint Servattumus began in 1992 as a homebrewing hobby of Toon van der Heijden and brothers Carli and Henk van den Ekart, initially brewing in a kitchen and later in Van der Heijden's shed. They later used the facilities of Brouwerij De 3 Horne. In 1996, Stichting Bierbrouwerij Sint Servattumus was officially founded, and on 1 September 1997 the brewery obtained a licence to sell beer. To support the brewery financially, the Vereniging Vrienden van Bierbrouwerij Sint Servattumus was established; members paid annual dues and could become bondholders. Distribution took place via Slijterij De Graaf in Schijndel. From late 1997, Sint Servattumus largely had its own brewing facilities, allowing further expansion. In 1998, Henk van den Ekart bought a building on Ericastraat in a Schijndel industrial estate. Part was used for his own business, and another part was converted into a brewery. On 3 September 2000, the brewery officially opened its doors. By the end of 2000, it could brew 1,800 litres per month, and that year total production was 220 hectolitres. In 2001, the tasting room opened. In 2003, Sint Servattumus took over a bottling line with labelling machine from Arcense Bierbrouwerij. In 2005, a new brewhouse was commissioned and a new tasting room opened. In 2007, the brewery expanded by 100 m² after the painter occupying the building left; a new bottling line with labelling machine was installed there. In 2004, traditional hop growing in Schijndel was revived with a hop field behind the Schaapskooi. The hops from this field are used by Sint Servattumus and other local breweries. In 2005, the brewery introduced a new spelt beer brewed with spelt from the bolle akkers in Liempde. In 2009, Sint Servattumus was named 'Held van de Smaak' in Brabant and won the Publieksprijs van Nederland. In 2010, it obtained a distilling licence and began distilling speltjenever; previously the speltjenever was distilled by stokerij De Onrust in Wageningen. Also in 2010, space was made for whisky production. In 2018, Van der Heijden suffered a cerebral haemorrhage and had to stop working at the brewery. In 2019, Henk van den Ekart died. Carli van den Ekart decided to continue the brewery together with Paul Mettler and Riet van den Ekart, Henk's widow. In 2020, the brewery was restructured and downsized. The building was sold to STM Elektro, and the brewery now rents back about half of it. The logo and house style were also renewed. In 2021, Sint Servattumus brought a beer cheese to market.
