Overview
Rokkakuya 1994+ is a ramen shop operated within the Shin-Yokohama Ramen Museum. It revives the 'iekei' ramen brand Rokkakuya, one of the so-called 'iekei gosanke' (three great iekei houses). The original Rokkakuya opened in Rokkakubashi in 1988 under founder Takashi Shinto, who had trained at the iekei originator Yoshimuraya and managed its second shop, Honmokuya. Rokkakuya was an opening member of the Ramen Museum in 1994 and operated there until May 31, 2003. The main shop closed in October 2017 and bankruptcy proceedings followed in 2020; founder Takashi Shinto passed away on October 5, 2022. The museum revival was a project begun while Shinto was alive, realized with cooperation from the existing Rokkakuya Totsuka shop and Hamamatsu's Kuramaya, run by Shinto's designated disciple Yuji Hakamada. The shop serves iekei-style tonkotsu shoyu ramen with medium-thick straight noodles and standard iekei toppings.
History
Rokkakuya was one of the 'iekei gosanke' (three great iekei houses). Its founder, Takashi Shinto, was originally a Western-food cook; wanting to open his own shop, he apprenticed at Yoshimuraya, the root of iekei ramen, and after serving as manager of Yoshimuraya's second shop Honmokuya, he opened Rokkakuya in Rokkakubashi in 1988. In 1994 Rokkakuya opened as an opening member of the Shin-Yokohama Ramen Museum, operating there from March 6, 1994 to May 31, 2003. After leaving the museum in 2003, the brand expanded, at its peak operating about ten shops nationwide. However, the founder's health declined; the main shop closed at the end of October 2017, and bankruptcy proceedings were undertaken in 2020. On October 5, 2022, Takashi Shinto passed away. Currently his younger brother operates a separately managed Rokkakuya in Totsuka, continuing the brand's history. In 2021, when the museum launched its 'that famous shop once more' project, museum director Iwaoka proposed a Rokkakuya revival project to Takashi Shinto. Due to his health, Shinto replied that he could not do it himself but that it could be done in the form of his disciple doing it. After discussions, the chosen person was Yuji Hakamada of Kuramaya in Hamamatsu, a highly trusted disciple whom Shinto had allowed to become independent in under five years. The revival project began with cooperation and endorsement from Makoto Shinto (Takashi Shinto's younger brother) and Ayumi Tsuyuki (Shinto's niece) of the Rokkakuya Totsuka shop. The revived shop uses ingredients not greatly different from those of the time, but employs a custom large cauldron, evolving the bone balance and boiling method to pursue the sweet-toned soup the founder envisioned.
