Overview
Nogami is a Japanese bakery chain that specializes in high-grade 'nama' (raw) bread. The official website describes it as a '高級「生」食パン専門店' (high-grade 'nama' bread specialty store). It has expanded to 47 prefectures with 173 stores, according to its official about page.
History
According to the official about page, the founder, who had experienced food hardship in childhood, started a restaurant business. After more than 20 years of managing various restaurants, he decided to create something that would be loved by many and become the best in Japan. He developed a soft bread that does not use eggs, and after two years of trial and error, he completed a bread with softness, fine texture, sweetness, and aroma. The bread is priced at double the normal price, and initially even family members laughed at the idea of selling a loaf for 800 yen. However, customers gradually appreciated it, and the chain achieved 173 stores across all 47 prefectures within 6 years and 8 months of founding.
