Minipivovar Pegas

Minipivovar Pegas is a microbrewery in Brno, Czech Republic, built as one of the first in the country after 1989 and the first in Moravia. The idea to convert a building whose foundations date to the 14th century originated in 1990, and in September 1992 the brewery, restaurant and hotel sections were put into operation. Its brewhouse is a classic two-vessel system located in the pub area, with a batch volume of 20 hl and a brewing process of about 8–10 hours. Annual output is around 2,400 hl, and nearly 80% of production is consumed in the brewery restaurant. The core beer range includes Světlý ležák, Oatmeal Stout, a top-fermented wheat beer and the special semi-dark beer Gold, supplemented by limited seasonal specials.

The heart of the brewery is a classic two-vessel brewhouse located in the pub area, with a batch volume of 20 hl and a brewing process lasting about 8–10 hours. Main fermentation takes place in stainless steel cylindro-conical tanks, roughly 7 days depending on beer type at temperatures from 8 to 22 °C. Young beer then matures in lager tanks of 20 or 40 hl capacity at 3 °C, for bottom-fermented beers at least 30 days. Annual output is around 2,400 hl, and nearly 80% of production is consumed in the brewery restaurant.
