Overview

Mikawaya Seimen Corp. (株式会社三河屋製麺) is a Japanese noodle manufacturer headquartered in Higashikurume, Tokyo, specializing in fresh Chinese noodles (nama chūka men) for commercial use. Founded in 1961 in Hōya (now Nishitokyo), the company was incorporated as Mikawaya Seimen-sho in 1965 and reorganized as a stock company in 2001. It operates two production plants and a logistics base in Higashikurume, plus a factory in New Taipei City, Taiwan, with a total daily production capacity of approximately 100,000 servings and a client base of about 1,000 restaurants from Hokkaido to Okinawa. The company's core strategy is to focus exclusively on fresh Chinese noodles and to offer custom-made, order-specific noodles tailored to each restaurant's soup and chef preferences. This approach, adopted around 2000 under president Iwao Miyauchi, helped Mikawaya Seimen overcome its late entry into the Chinese noodle market and build a reputation among ramen shops, including famous names such as Shinasoba-ya in Yokohama. The company emphasizes quality control, hygiene management, and stable production, and obtained ISO 22000:2018 certification in 2018. Its noodles are used by numerous award-winning and Michelin-listed ramen restaurants, and the company has been featured in Japanese media. Mikawaya Seimen remains a private, family-run business. It is known for its "kentō na seimen-ya" (steadfast noodle maker) philosophy, combining strict quality and hygiene control with employee development. The company also operates a Taiwanese subsidiary, 臺灣三河屋製麵股份有限公司, which began production in 2018.

History

Mikawaya Seimen was founded in 1961 in Hōya City (present-day Nishitokyo, Tokyo). In October 1965, it was incorporated as a limited company under the name Mikawaya Seimen-sho (有限会社三河屋製麺所). Initially, the company produced a wide range of noodles, including udon and Japanese soba. However, the market for these noodles was challenging: specialty udon and soba shops often made their own noodles, and selling to supermarkets meant competing on price with large manufacturers. Meanwhile, ramen shops mostly used purchased noodles. Around 2000, when Iwao Miyauchi became president, the company decided to focus exclusively on fresh Chinese noodles (nama chūka men). To build a client base, Miyauchi visited ramen shops persistently. Initially, the company was unknown and had few products, so it was often turned away. A turning point came when a ramen shop owner in Kichijōji gave feedback that led Mikawaya to experiment with different types of wheat flour, kansui, salt, and water ratios, repeatedly remaking noodles to match the shop's soup. This experience taught the company the importance of catering to the artisan's preferences and the compatibility between noodles and soup. As a latecomer to the Chinese noodle market, Mikawaya adopted a strategy of making custom-made, order-specific noodles, listening carefully to shop owners and responding to their requests as much as possible. In 1999, through an acquaintance, Miyauchi met Minoru Sano, founder of Shinasoba-ya in Totsuka, Yokohama. Although Shinasoba-ya made its own noodles, when it opened a branch at the Shin-Yokohama Ramen Museum in 2000, Sano asked Mikawaya to supply noodles for that location. The business relationship lasted about a year, but Sano introduced Mikawaya to other clients, and word spread that "the ramen demon" used Mikawaya Seimen's noodles. This helped the company expand its client base. Today, Mikawaya supplies noodles to numerous long-established and highly regarded ramen shops, including winners of the TRY Ramen Awards and Michelin Guide-listed restaurants. Media coverage of these clients often mentions Mikawaya Seimen, increasing its national recognition. In terms of facilities, the company moved its headquarters and factory to Higashikurume City in April 2003 to expand its noodle production lines. In December 2008, a second factory began operation nearby. In January 2013, the main factory was relocated. In June 2018, the company obtained ISO 22000 certification for food safety. In December 2018, a factory in New Taipei City, Taiwan, began operation. In September 2019, a logistics base called MLB (Mikawaya Seimen Logistics Base) started operation in Higashikurume. The company also registered "Mikawaya Seimen" as a trademark in December 2011. Mikawaya Seimen emphasizes stable production of consistent noodles despite variations in flour and weather. It maintains strict hygiene control and has implemented an ISO 22000:2018 food safety management system. The company also has a general business owner action plan to support work-life balance for employees. As of June 2019, it had 145 employees. Its main banks are Tama Shinkin Bank, Mizuho Bank, and Mitsubishi UFJ Bank.
