History
Maison Kayser is a bakery brand created in France by baker Éric Kayser. The brand's own history page states that the story of Maison Kayser began at 8 rue Monge on Friday 13 September 1996. Éric Kayser inherited a taste for bread, being born into a family of bakers, and joined the Compagnons du Devoir early on. In the early 1990s he bet on the development of so-called "tradition" bread made from French wheat flours without additives and using sourdough. He was a trainer for nearly 10 years at the Institut National de la Boulangerie-Pâtisserie (INBP), then within his own consulting entity, followed by sharing and exchanges with bakers around the world. Since the end of 2013, gluten-intolerant customers have been able to enjoy a gluten-free range offered in some of the Paris bakeries or by mail order.
