Overview

Komurasaki (こむらさき) is a ramen chain based in Kumamoto City, Kumamoto Prefecture, Japan, operated by Kumamoto Ramen Co., Ltd. (熊本ラーメン株式会社). It is recognized as one of the originators of Kumamoto ramen, a regional style known for its rich tonkotsu (pork bone) broth, often with garlic and fried garlic oil. The brand began in November 1954 when a shop under the name "Komurasaki" opened in Hiromachi, Kumamoto City; the name was reportedly borrowed from a ramen shop of the same name in Kagoshima City. In 1957 the shop moved to its current Kamitori main store location, and in 1959 the limited company Komurasaki was established. Over the decades it expanded within Kumamoto, opening a branch in the Kumamoto Traffic Center in 1969 and the Kamitori Chuo branch in 1979. In 1988 Kumamoto Ramen Co., Ltd. was founded, and in 1989 the brand developed and began selling souvenir ramen products. The chain also operated a branch in the Shin-Yokohama Ramen Museum from 1994. The main store closed in 2017, and the Kumamoto Traffic Center branch closed in 2015 when the facility shut down. Today the brand operates the Kamitori Chuo branch in Kumamoto City and a branch at the Shin-Yokohama Ramen Museum (operated by a separate company). It also sells mail-order and souvenir ramen products.
