Overview

Kobayashi Tsukudani Co., Ltd. (株式会社小林つくだ煮) is a Japanese food manufacturer specializing in tsukudani — seafood and other ingredients simmered in soy sauce and sugar as a traditional preserved side dish. The company was founded in 1935 by Noboru Kobayashi in Minato-machi, Toyohashi, Aichi Prefecture, and has continued in the tsukudani business for more than 90 years. It is currently led by the fourth generation of the Kobayashi family. The company is based in Toyohashi, in the Higashi-Mikawa region of Aichi, an area known as one of Japan's leading tsukudani-producing regions, particularly for seafood-based tsukudani. Kobayashi Tsukudani positions its products not as luxury gift items but as high-quality everyday foods that can be eaten daily without becoming tiresome. It emphasizes careful, traditional handcrafted production, using ingredients such as fresh-pressed soy sauce (生揚げ醤油) and white sugar (上白糖), and avoiding unnecessary additives. Over time the company has adjusted its flavor profile to be less sweet and more balanced, in line with changing consumer tastes. Its product range includes the additive-free "Tsukudani Tengendo" series, launched in 2000, and the Food Cup series, launched in 2007. The company also sells through mail order and exhibits at trade events such as the Supermarket Trade Show at Makuhari Messe. In 2012 the company changed its name from Kobayashi Tsukudani Kogyosho to Kobayashi Tsukudani. It remains a private, family-run manufacturer.

History

Kobayashi Tsukudani was founded in July 1935 (Showa 10) by Noboru Kobayashi in Minato-machi, Toyohashi, Aichi Prefecture, where he began manufacturing tsukudani. In 1938 (Showa 13), a second tsukudani factory was built in Mokpo and Kōyama in Korea, using local specialties as ingredients. In 1941 (Showa 16), due to intensifying war and tightening controls, the Korean factory was withdrawn. In 1942 (Showa 17), with the formation of a prefectural association, the company took on roles as a control committee member of the Aichi Prefecture Tsukudani Industry Association and as a product inspector for the Toyohashi branch. After controls were lifted, the business returned to free trading. In April 1960 (Showa 35), Kobayashi Tsukudani Kogyosho Co., Ltd. was established. In 1977 (Showa 52), a new factory was built in Kitajima-cho, Toyohashi, to increase production capacity. In 1983 (Showa 58), Noboru Kobayashi retired as president and was succeeded by Yasuo Kobayashi, previously senior managing director. In 1987 (Showa 62), a three-story warehouse was newly built. In 2000 (Heisei 12), Yasuo Kobayashi retired and was succeeded by Toshio Kobayashi, previously senior managing director. In the same year, the additive-free "Tsukudani Tengendo" series was launched, which after improvements became the basis for the basic technology of most current products. In 2004 (Heisei 16), Toshio Kobayashi retired and was succeeded by Toshio Kobayashi (a different character reading), previously managing director. In 2006 (Heisei 18), factory expansion work began, and in 2007 (Heisei 19) it was completed, expanding production facilities. In April 2007, the Food Cup series was launched. In April 2012 (Heisei 24), the company name was changed from Kobayashi Tsukudani Kogyosho to Kobayashi Tsukudani. In February 2017 (Heisei 29), the company exhibited at the Supermarket Trade Show held at Makuhari Messe, attracting much attention including new products. In 2022 (Reiwa 4), a factory expansion was carried out to improve productivity. In 2023 (Reiwa 5), the company promoted DX (digital transformation) focusing on internal information sharing and improvement of production management systems.
