History

Atria Danmark's official website presents a history of 100 years of butchering, from original recipes and sales from a butcher's own van to an international cold-cuts producer with quality as the focal point. The timeline includes: 1920, Aalbæk Specialiteter sees the light of day; 1950, Aage Jensen Salamifabrik, later 3-Stjernet, is founded; 1972, 3-Stjernet A/S is registered as a trademark; 1978, the sliced salami in a tray pack is introduced; 1988, new factory in Hansted; 1990, begins production of organic Aalbæk Specialiteter; 2007, 3-Stjernet A/S becomes part of the Finnish food group Atria Scandinavia; 2015, the company changes its name to Atria Danmark upon the purchase of Aalbæk Specialiteter; 2020, 70th and 100th anniversaries respectively, and among the leading food companies. The 3-Stjernet brand page adds that Aage Jensen established his salami factory in 1950, but it was only in 1972 that 3-Stjernet saw the light of day. Aage Jensen was a trained butcher with a great interest in salami production; he experimented with his passion in a small room and drove around in a van selling his sausages. After focusing on development and production for the first good 20 years, the products were to have a name in the early 1970s, resulting in the well-known trademark 3-Stjernet. The name was decided over a good dinner between Aage Jensen and his son-in-law Steen Kramer and was strongly inspired by the name of the good bottle of cognac that had come to the table during the dinner. Through the decade, 3-Stjernet launched a series of advertising campaigns about "Den lille forskel". The campaigns helped cement the sausage's popularity and the new name. In 1978, 3-Stjernet revolutionized the market by launching sliced cold cuts and presenting them in a so-called tray-pack version. The son-in-law was an important part of the company; besides handling 3-Stjernet's export, he was the reason 3-Stjernet in the 1980s became known for the plane with the banner at home in Denmark. Steen Kramer had a pilot's certificate and used much of his free time flying around Denmark advertising for 3-Stjernet along the Danish coasts. In the 1990s, 3-Stjernet expanded its range to consist of a long series of classics. The Aalbæk Specialiteter brand page states that each product in Aalbæk's portfolio is made from the finest ingredients of the highest quality, delicately spiced and expertly crafted according to recipes, craftsmanship and competence that have been passed down from generation to generation of butchers since 1920.
