Potassium bromate use and detection controversy
Yamazaki's decision to resume potassium bromate use in bread attracted attention because other Japanese baking companies had voluntarily discontinued the ingredient earlier amid concerns about possible carcinogenicity. Yamazaki said its revised production method reduced the compound so that none remained in finished products and reported no detection at a 0.5-parts-per-billion testing accuracy.
