Overview
Trillium Brewing Company is a privately owned craft brewery and hospitality company founded by JC and Esther Tetreault in Boston, Massachusetts, in 2013. The company developed around a New England farmhouse-inspired interpretation of modern craft brewing: hop-forward ales, farmhouse-style beers, fruited and mixed-fermentation offerings, and a direct relationship with customers through taprooms, restaurants, beer gardens, and to-go retail. Its identity combines beer production with place-based hospitality, food, agriculture, and a strong connection to the New England landscape. The Tetreaults spent approximately two years planning the business, building out its first site, developing pilot beers, and obtaining licenses and permits. Trillium opened on March 21, 2013, in Boston's Fort Point neighborhood. The original Congress Street facility was approximately 2,500 square feet and combined brewing with retail and customer service. Demand quickly exceeded the capacity of the site, prompting the company to expand production and distribution infrastructure. In December 2015, Trillium opened a substantially larger production facility on Shawmut Road in Canton, Massachusetts. The approximately 16,000-square-foot site included a 30-barrel brewhouse, allowing the brewery to increase output and pour beer directly for visitors. The Canton operation became the principal production base, while Boston remained important to the brand's restaurant and taproom presence. Trillium expanded its hospitality footprint during the late 2010s. A seasonal beer garden opened on Boston's Rose Kennedy Greenway in 2017 through a partnership with the Rose Fitzgerald Kennedy Greenway Conservancy. In 2018, the company opened a three-story Fort Point restaurant and brewery with a patio, roof deck, and a farm-to-table-oriented menu. In 2019, it opened a taproom and beer garden at 401 Park Drive in Boston's Fenway neighborhood. In 2021, the customer-facing Canton operation moved from Shawmut Road to a larger facility at 100 Royall Street, overlooking the Blue Hills Reservation; the former Shawmut Road site continued as a production brewery. The brand's portfolio is centered on craft beer rather than a single flagship product. Its best-known styles and product families include New England-style India pale ales, double IPAs, American pale and amber ales, wheat beers, farmhouse-inspired ales, and fruited Berliner Weisse beers sold under the Daily Serving name. Trillium's prominence in specialist beer rankings helped establish it as one of the more visible breweries associated with the New England craft-beer movement. RateBeer placed the brewery among its top 100 brewers beginning in 2014 and ranked it third globally from 2016 through 2019, fourth globally in 2020, and Massachusetts's leading brewery in 2019. The company has also faced operational and labor-related controversies. In 2014, it temporarily closed after failing to renew its state brewer's license. In 2018, former employees publicly alleged wage reductions, labor-practice problems, quality issues, and misleading instructions concerning a beer made with tequila. JC Tetreault acknowledged mistakes, and the company announced that wages for affected longtime retail workers would be restored. In 2020, cans of Daily Serving reportedly over-carbonated and exploded in consumers' homes because of continued fermentation by active yeast under warm-storage conditions. Following criticism of its initial response, Trillium issued a warning and began offering refunds. Trillium remains an active regional brewery and hospitality brand with facilities spanning Boston, Canton, Massachusetts, and North Stonington, Connecticut. Its business model continues to combine beer production, on-premise hospitality, seasonal outdoor service, food, and agricultural activity.
History
Trillium Brewing Company was established in Boston by JC and Esther Tetreault on March 21, 2013, after about two years of planning, pilot brewing, site construction, and licensing work. The founders positioned the business as a New England farmhouse-inspired brewery rather than simply an urban production operation. Its first premises on Congress Street in Fort Point combined a small brewery with to-go retail and customer service. At roughly 2,500 square feet, the site was quickly outgrown as demand increased. The company's first major expansion came in December 2015, when Trillium opened a 16,000-square-foot facility at 110 Shawmut Road in Canton. The site housed a 30-barrel brewhouse and gave the company the capacity to scale production while introducing direct beer service in Canton. The former Boston brewery remained part of the brand's identity, but Canton became the central production hub. Trillium then broadened its model from brewery retail into destination hospitality. In summer 2017, it began operating a seasonal beer garden on Boston's Rose Kennedy Greenway in cooperation with the Rose Fitzgerald Kennedy Greenway Conservancy. The outdoor site offered draft beer and food from rotating vendors. In October 2018, the company opened a three-story Fort Point restaurant and brewery with outdoor seating, a roof deck, and a menu oriented toward farm-to-table dining. In October 2019, a Fenway taproom and beer garden opened at 401 Park Drive, extending the brand into another major Boston visitor and entertainment district. In July 2021, Trillium relocated its Canton taproom from Shawmut Road to 100 Royall Street. The new customer-facing site provided a larger and more immersive setting with views toward the Blue Hills Reservation. Shawmut Road continued to serve as a production facility. The company's wider operating footprint also includes a farm in North Stonington, Connecticut, described as focusing on regenerative and holistic agriculture. In total, the business has operated brewery, taproom, restaurant, beer-garden, and agricultural facilities across Massachusetts and Connecticut. Trillium became prominent in specialist beer rankings during the 2010s. RateBeer placed it in its global top 100 beginning in 2014, ranked it third among breweries worldwide from 2016 through 2019, named it the leading brewery in Massachusetts in 2019, and placed it fourth globally in 2020. The brewery also received category recognition for multiple IPAs, double IPAs, American amber and pale ales, and wheat beers. The company experienced several controversies. In 2014, Massachusetts authorities shut the brewery for nearly a month after its state brewer's license had not been renewed. In late 2018, former employees published allegations involving wage reductions, retail pay practices, product quality, and the use of tequila in a beer. JC Tetreault admitted that the company had made mistakes, and Trillium subsequently announced wage restoration for affected longtime retail staff and apologized to employees and customers. In July 2020, cans of the Daily Serving fruited Berliner Weisse series developed excessive carbonation because residual active yeast continued fermenting in warm conditions. After initially attributing the problem to customer storage and declining refunds, the company issued a warning and offered refunds following public criticism. Trillium remains an active regional brewery and hospitality brand.
