Criticism over tip and wage practices
Media reports alleged that Tragus and other restaurant groups used customer tips, particularly card gratuities, in calculating minimum-wage payments and pressured staff over the collection of cash tips. After legal changes took effect on 1 October 2009, Tragus reviewed its arrangements and moved to a payroll-based tronc system, subject to a deduction for certain card-related administrative costs.
